RECIPE OF THE MONTH Pineapple Jalapeno Salsa

This tasty creation is a refreshing accompaniment to salmon, chicken, fish tacos, and pulled pork. It’s also tasty by itself on a bed of shaved slaw. Why stop there?

INGREDIENTS

2 containers of chopped fresh pineapple and it’s juices

3 stalks of green onions, thinly sliced

1 small red or green jalapeno, serrano, or habanero pepper, seeded and minced

Juice of one lemon

1 Tablespoon of pickled ginger or finely chopped ginger (to taste)

2 to 3 Tablespoons of chopped mint leaves, parsley or cilantro

A pinch of salt to taste

Combine all ingredients

Can keep up to 3 days in sealed container
